Summer’s here and nothing sounds better than some nice, cold ice cream. Unfortunately, ice cream is a treat packed with tons of calories and sugar. Fortunately, this recipe will give you all the joys of ice cream without all of the calories and sugar; and you only need one ingredient, Bananas!
Yield: 2 servings
Ingredients:
1 large banana
1 tbsp peanut butter (optional)
1 tbsp cocoa powder (optional)
Instructions:
1) Chop up the large banana into thin, circular slices (approximately 50mm in width)
2) Place the slices of banana into a Ziploc bag (or any plastic bag) and put the pieces in the freezer for a minimum of three hours (thinner slices can be put in for less time, thicker slices for more time)
3) Place the frozen banana slices in a food processor (preferably) or a very powerful blender and blend until the bananas reach a smooth and creamy consistency, like melted ice cream (approximately 2 minutes)
4) While blending, you can add the peanut butter or cocoa powder for peanut butter or chocolate flavored ice cream, if you would like
5) Place the ice cream in a freezer friendly container and place the container in the freezer for as long as desired (15 minutes for soft ice cream, a couple hours for frozen solid ice cream)
